Supernatural Baja

Along Baja California's rugged coastline there exists only a handful of crystal-clear supernatural tidal lagoons, teeming with wildlife, constantly cooled by the briny winds and currents of the Pacific.

At Sol Azul, these idyllic Baja lagoons are our holy grail. Remote, wild and untouched, they provide the ultimate conditions for ultra-premium oyster farming. No other places on Earth can match them.

Even a small distance between lagoons creates a world of difference in taste. Micro-climate, ocean floor mineralogy, salinity, ocean purity, ocean currents, tidal activity and remoteness from civilization combine to generate the most exquisite and unique oyster experience.

Oyster’s Paradise

Laguna San Ignacio is at the epicentre of Mexico’s impressive El Vizcaíno Biosphere Reserve (est’d 1988). Designated by the U.N. as a World Heritage site in 1993, the San Ignacio Lagoon is a critical habitat for Pacific Gray whales, and an important feeding ground for endangered leatherback, hawksbill, green and olive Ridley turtles. 

Our first ovation in sustainable oyster farming began here in 1993. Thirty years on, we continue to honor the sanctity of this one-of-a-kind ecosystem via all of our actions and endeavors. Our Sol Azul operation at Laguna San Ignacio is independently certified as "Responsibly Farmed" by ASC.

Our Pacific oysters from the San Ignacio Lagoon are prized for their signature mix of cucumber sweetness, saltiness, creaminess and tanginess. Of note is the initial wave of brininess on the palate that reflects the celebrated salinity of this southern Baja lagoon.

Our small-shelled San Ignacio Kumamotos feature bite-sized plump, velvety flesh with a delicate, mild brininess. On the palate, they deliver sweet, fruity flavors with a wondrous melon finish.
